Chickpeas, Leeks and Flatbread

Some of my best dinners come from not knowing what I am going to make and just winging it to see what happens. Today was a busy day and I didn’t plan what I was going to make for supper,  when the time came I realized that we were definitely in need of a grocery hall, not having time to do that I just grabbed some randoms that I had on hand and it turned out really delicious. I wanted to make a sort of sausage bun with a “meat” ball sauce. I also had talked today with my local fav coffee shop about making homemade Naan or flatbread so I thought I would give a try as well.


Heres what I did for my saucy chickpea “meaty” mixture

1 Yellow Pepper, 1 Leek, 1 can Chickpeas, 1-2 Cups Spaghetti Sauce, S&P

Diced up the peppers and clean and slice the leeks, add to your pan with some salt and pepper for about 5 min or until tender.  Next add the can of chickpeas making sure to drain and rinse them first, add the spaghetti sauce and a splash of water. Cover with a lid and let cook for about 10 min so it thickens up nicely. Salt and Pepper to taste.


Once I made the Flatbread I realized that it really is a bigger version of what my mother use to make for us as special treats when we were kids, it made me feel very nostalgic. The differences were that hers were about 2 inch round and cooked in a pan of butter and we would dip them in molasses. Great memories!

Flat Bread:

2 cups Flour

2  tsp Olive Oil

200 ml Luke Warm Water

2 tsp Traditional Yeast

1 tsp Salt

1/2 tsp sugar

In a small bowl combine the Water, Sugar and Yeast and set aside for about 10 min. In a large bowl add the Flour, Oil, and Salt. Once the yeast has activated pour into the flour mixture and knead for about 5 min, or until smooth soft.

Cover and place in warm area in your kitchen for about 45min.

Divide dough into 6 balls and flatten each one like a pizza by stretched and pressing it with your fingers.

Place your grill on Med heat, I used a cast Iron Pan lightly greased with oil, then all you have to do is place the dough on the pan and once golden flip and cook the other side. It cooks amazingly fast, you can serve it with the Chickpeas and Leeks mixture. The Flat bread is great for scooping up all the juices.

*IF you don’t have the time for the Flatbread you can always just Put it on a sausage bun or on some toast, or all by itself it’s all up to you!!
